Delicious and healthy recipes with Nestle

At the beginning of this year, we partnered up with Nestle for our Well Up Challenge 2014. This challenge has taken 13 individuals on a journey to health and wellness with the help of our panel of experts. As the Well Up Challenge 2014 draws to a close, we thought we would share some delicious and healthy recipes from Nestle to encourage you on your own health journey.









High in protein:

Barley risotto with trout (serves 4) 

What you will need:

  • 1 tbsp olive oil
  • 1 medium (150g) onion, finely chopped
  • 2 cloves garlic, crushed
  • 2 large (160g) flat mushrooms, chopped
  • 1 cup (200g) pearl barley
  • 1 tbsp MAGGI Original Seasoning
  • 2 cups (500mL) vegetable stock
  • 4 x 150 g trout fillets
  • juice ½ lemon
  • 1 tbsp chopped dill
  • lemon wedges, to serve


  1. Preheat oven to 180°c/160°c fan forced.
  2. Heat a large non stick casserole dish over medium heat. add oil, onion and garlic; cook 3 minutes or until soft. add mushrooms, cook 1 minute; add barley, barbeque MAGGI original seasoning and stock. cover with lid and bake for 40 – 45 minutes.
  3. Place trout fillets on top of the risotto, squeeze over lemon juice and stir. replace lid and bake a further 15 minutes.
    flake the trout into large pieces and gently combine with the barley risotto.









Low in salt:

Creamy Mexican Chicken Burritos (serves 4)

What you will need:

  • 1 tbsp oil
  • 1 medium (150g) onion, chopped
  • 2 cloves garlic, crushed
  • 1½ tbsp cornflour
  • 375mL can CARNATION Light & Creamy Cooking Milk
  • 2 tbsp MAGGI Chilli Sauce
  • 2 cups (300g) chopped cooked chicken
  • 8 (19cm) wholemeal flour tortillas
  • shredded lettuce, to serve
  • diced tomato, to serve
  • sliced avocado, to serve


  1. Heat oil in a medium frying pan over medium heat; add onion and garlic, cook 2 minutes or until soft.
  2. Blend cornflour with 1 tablespoon of CARNATION light & creamy cooking milk; add to pan with remaining milk, MAGGI chilli sauce and chicken; bring to boil stirring, simmer 3 minutes or until thick and creamy and heated through.
  3. Divide chicken filling between tortillas and top with lettuce, tomato and avocado.









Low fat:

Creamy Salmon, zucchini and herb pasta (serves 4) 

What you will need:

  • 375g rigatoni
  • spray oil for cooking
  • 1 (220g) salmon fillet, skin and bones removed
  • 2 (240g) zucchini, grated
  • 375mL can CARNATION Light & Creamy Cooking Milk
  • 2 tsp cornflour
  • 1 bunch coriander, stems removed, chopped finely
  • 1 tbsp baby capers
  • finely grated zest of 1 lemon


  1. Cook pasta according to directions on packet; drain; keep warm.
  2. Heat a frying pan over medium heat; spray with oil; add salmon and cook for 3-5 minutes each side or until cooked to your liking. remove; stand for 5 minutes to cool slightly; using a fork flake salmon into small pieces.
  3. Meanwhile, using same pan, add zucchini; cook 3 minutes, stirring occasionally. add combined CARNATION light & creamy cooking milk and cornflour, bring to boil, simmer 4 minutes or until thickened slightly.
  4. Return salmon to pan with remaining ingredients. toss through pasta.
